Flavor/Aroma: A nice fresh, raw pea nose, celery with hints of summer herbs. The mouth is quite decisive almost like mustard greens and raw cabbage. A good pepperiness with a clean and astringent bitterness, which is never overwhelming. It's like crunching into a freshly picked lettuce.
