Uses: It would be paired well with bean salads (especially Cannellini), salmon dishes, roast veggies, bean soups, baked chicken or lamb, lentils, brushcetta, broccoli, pasta with sauce, mozzarella cheese.
Flavor/Aroma: There is good freshness on the nose! The mouth has a pleasant fullness and a light bitterness for a Frantoio. Like the nose there are pleasant green sensations in the mouth as well as aromatic herbs evident. The burn is good and satisfying almost like a wasbi with traces of green banana.
