The Salvadori's family origins come from Montescudalo, a small hilltop village a few kilometers from the sea in Cecina. The family patriarch, Peter, along with his sons were intent on cultivating their trees and vines, an art handed won from father to son combining innovation and tradition respecting the rules laid down by their ancestors.
The farm grew over the decades of cultivation and spread throughout the flat strip of land that joins the hill to the sea. And so, Il Cavallino was born in the countryside of Bibbona, in the heart of the Etruscan Coast. There the land, hills and the sea, and a unique area of olive trees, impart a taste to their extra virgin olive oils that is unparalleled.
